Salchichón is an air-cured sausage that resembles a traditional hard salami. Salchichón Sausage is produced from pork meat that is coarsely ground with salt black pepper. Chunks of ground peppercorns randomly distributed among the bits of fat are common throughout the hard texture of this Sausage. Similar in flavor to Spanish chorizo sausage, Salchichon is commonly served as an appetizer with cheese or with hearty breads and red wine.
