Archipelago Smoked Fish Tacos
100gm Smoked Fish
2 tablespoons olive oil
6 flour or red chili tortillas
Caribbean Salsa (1 part each diced mango, papaya, pineapple, 2 tablespoons red onion, cilantro, lime juice, jerk seasoning).
1. Lightly flake 100g smoked Marlin or Tuna and marinate in olive oil
2. Make Caribbean Salsa (combine all ingredients).
3. Warm the tacos in a pan.
4. Gently combine fish and salsa on taco and squeeze over lime.
5. Season with Salt and Pepper
