Wholegrain Bread with Herb Cottage Cheese, Smoked Salmon, and Arugula

This is a super simple recipe and a delicious class with a small twist.

Ingredients

  1. 1 cup cottage cheese
  2. 1 tablespoon finely chopped fresh chives
  3. 1 tablespoon chopped fresh flat-leaf parsley
  4. 1 teaspoon finely grated zest of lemon
  5. 4 large slices of wholegrain bread
  6. 2oz baby arugula
  7. 3oz smoked salmon
  8. lemon wedges, to serve

 

Method

  1. In a small bowl combine cottage cheese, chives, parsley, and lemon zest.
  2. Toast or grill wholegrain bread until golden. Spread each slice with one-quarter of the cottage-cheese mixture then top with rocket and smoked salmon. Serve with a lemon wedge.
