Wholegrain Bread with Herb Cottage Cheese, Smoked Salmon, and Arugula
This is a super simple recipe and a delicious class with a small twist.

- 1 cup cottage cheese
- 1 tablespoon finely chopped fresh chives
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 teaspoon finely grated zest of lemon
- 4 large slices of wholegrain bread
- 2oz baby arugula
- 3oz smoked salmon
- 4 lemon wedges, to serve
- In a small bowl combine cottage cheese, chives, parsley, and lemon zest.
- Toast or grill wholegrain bread until golden. Spread each slice with one-quarter of the cottage-cheese mixture then top with rocket and smoked salmon. Serve with a lemon wedge.
