Summary

The Senior Cook will play an important role in ensuring the production of high-quality, delicious, and innovative prepared food offerings that align with the company’s mission. The objective will be to prepare fresh foods for immediate consumption, as well as food products that will be licensed for longer-term shelf-life. This role combines leadership, culinary expertise, and a passion for healthy, fresh food.

Description

Menu Development & Innovation

  • Create a menu of fresh, seasonal and on-trend food products that show-case high quality local ingredients.
  • Ensure recipes adhere to Bali Direct Store standards for quality, cost-effectiveness and reducing food waste.
  • Ensure menus are based on a review of Bali Direct sales, customer demands, on-trend products and successful products of competing businesses.
  • Base menus on knowledge about ingredients, dietary restrictions and international food traditions.
  • Ensure that foods products have a high visual aesthetic, leading the team on quality containers and labels.

 

Culinary Leadership & Team Management

  • Train and lead a team to produce consistently high standard food.
  • Maintain high standards for food safety and handling at all stages of production.
  • Conduct regular audits of food safety.
  • Ensure kitchen equipment is appropriate for tasks and maintained correctly.

 

Inventory Management & Cost Control

  • Develop and implement strategies to minimize food waste and optimize inventory management.
  • Oversee ordering, receiving, and storage of all culinary ingredients.
  • Work within established budgets for food purchases.

 

Qualifications

  • Relevant training with preference for a Culinary school degree.
  • A minimum of 4 years of experience in the culinary industry and 2 years in a supervisory or managerial position.
  • Proven experience in menu creation and food costing.
  • Thorough understanding of health and food safety regulations.
  • Knowledge of the whole foods sector is an advantage.
     

Reporting

  • The Senior Cook will report directly to the Store Manager.
