8 Degrees Halloumi Eggs

200g 8 Degrees Cheese Cypriot style Halloumi
1 grated Zucchini
2 eggs , beaten
Handful of your favorite herbs – dill, parsley, basil – chopped
cracked pepper and salt

1. Melt oil or butter in a pan
2. Slice Halloumi and pan fry with the zucchini until golden
3. Pour in eggs and nudge around pan with spatula to get ripple effect at the edges
4. Sprinkle chopped herbs over the top.
