Why We Use Natural Preservatives

Many of the fresh products you find in our stores — including within the Bali Direct Kitchen range — are made using traditional preservation methods. That means when we need to extend freshness, we rely on ingredients you already know and recognise: salt, sugar, vinegar, and lemon juice.

No complicated additives. No unnecessary chemicals. Just methods that have worked for generations.

Why preservation matters

All fresh food has a natural shelf life.

Without some form of preservation, many products would spoil quickly — leading to waste, inconsistency, and unreliable quality. The question isn’t whether food is preserved. The real question is how.

There are two broad approaches:

  • Synthetic preservatives created in laboratories
  • Natural preservation methods used for centuries

The natural way to preserve

Here’s how traditional ingredients help protect food safely and effectively:

  • Salt

  • Sugar

  • Lemon juice

Naturally acidic, lemon juice helps maintain freshness, flavour and colour — especially in fresh preparations.

These are not modern inventions. They are time-tested techniques.

When we prepare our own products in Bali Direct Kitchen — from fresh dips to pickled vegetables to ready-to-enjoy meals — we focus on keeping ingredient lists short and recognisable.

  • Is it necessary for safety and quality?

If the answer isn’t clear, we don’t include it.
