A French-style soft aged cheese with a bloomy rind and a sprinkle of food-grade ash. A cow’s cheese with a goaty bite. It is aged for two weeks, until a bloomy white jacket grows over the ash, creating a gooey layer just under the coat. A rich flavor that intensifies the longer it is aged. Have it young, or keep it a week longer for a stronger taste experience.
