Smoked Fish Vietnamese Salad

Ingredients

Dressing:
1 clove garlic
1 small red chili deseeded and chopped
1 tablespoon sugar
Lime juice

Salad:
250 gram thin rice noodles
150 gram smoked marlin or tuna
1/2 cucumber
1 carrot cut into matchsticks or grated
6 spring onions shredded
Handful coriander and mint leaves
1 tablespoon roasted peanuts

Method

1. To make the dressing mash garlic, chili, sugar and lime juice in mortar with 3 tablespoons water and set aside.
2. Cook rice noodles according to instructions and set aside.
3. Mix flaked fish and chopped vegetables.
4. Combine flaked fish, chopped vegetables and noodles, pour over dressing and mix.
