8 Degree Fattoush Salad with marinated Persian Feta

Ingredients

1 jar of 8 Degrees Marinated Persian Feta
1/3 cup lemon juice
1 tablespoon honey or to taste
Sumac to taste
Salt and pepper to taste
2-3 baby Cos lettuce
Bunch of radish
Handful of cherry tomatoes
1/2 red thinly sliced onion or to taste
Handful of mint leaves
100 gram pita bread toasted, in pieces

Method

1. Drain the oil from the jar of Persian feta and set aside.
2. Whisk the reserved feta oil, lemon juice, salt and pepper
3. Arrange the lettuce, radish, cucumber, onion, cherry tomatoes and mint leaves on a serving dish
4. Drizzle the oil dressing over the salad.
5. Dab pieces of Persian feta cheese on the salad.
6. Finish with the pita crisps.
